There seems to be a touch more concentration in Babich's 2021 Sauvignon Blanc Family Estates Organic than in previous vintages. This wine has had a bit of everything; a bit of wild yeast, a bit of malo and a bit of lees time. As a result, it's a more restrained example, offering a subtle floral lift alongside restrained notes of lime and pineapple fruit. It displays a light spritz initially, before moving through to its rounded midpalate. A firm acid drive and lightly phenolic structure provide satisfying grip on the finish. Fades a little more quickly than I'd like; otherwise, it would score a 90.
