The 2018 Chablis Fourchaume 1er Cru was matured 25% in wood, the remainder in stainless steel. It has a well-defined bouquet with light peppermint aromas infusing the malic fruit - quite Chassagne-like in style. The palate is well balanced, though it feels just too exotic for a Chablis and, bizarrely, reminds me of an aromatic variety from Alsace. I can't remember another Chablis doing that.
