This cuvee has a robe of light gold with subtle green glints; the bubbles are fine and light. The nose provides a whole bouquet of aromas, which have developed during five years of ageing in our cellars: - discreet white flowers, a hint of litchis and dried fruit, typical of the best Chardonnays. In the mouth, the wine's maturity is expressed in notes of roast hazelnut and Danish pastries, with a pronounced mineral finish. A mature wine for connoisseurs... to be drunk as an aperitif or as an accompaniment to foie gras.
The NV Brut Blanc de Blancs Grand Cru Cuvee Saint Denis is 100% Chardonnay in an intriguing blend of 65% 2004 and 35% 2003 vintages, two years with very complementary characteristics. The heat of 2003 is clearly felt in the weightiness and opulence, yet the wine gains freshness and salinity on the creamy finish. The Saint Denis is made from 70 year-old vines in Avize. Dosage was 7-8 grams per liter. Disgorged: July 26, 2008. Anticipated maturity: 2010-2018.
Ginger, apple, honey and toast aromas and flavors are focused and persistent, backed by a lively structure. There's a pleasant astringency on the finish and a lingering aftertaste of sourdough.
