Santo Wines Santorini Assyrtiko 2020

The 2020 Assyrtiko, the classic Santorini, is an unoaked monovarietal that comes in at three grams of residual sugar, 6.3 grams of total acidity and 13.6% alcohol. Only in bottle about a month when seen, this seemed in good shape. Fresh, clean and bright, this has a very different feel than the Aspa this issue, its richer and rounder sibling. It doesn't seem as concentrated, but the purity and freshness are enticing. I wouldn't be surprised if this ages better than I expect, but this is one I would prefer to drink very young while it is exuberant.
