The 2016 Net Sauvignon Blanc was sourced from 1982 vines on the Dalton Plateau in the Upper Galilee. It is unoaked and comes in at 14% alcohol. This is a fairly new offering. The winery says in 2012 it started experimenting by covering the vines during maturation with a specially designed canopy to prevent midday sun radiation from heating the leaves and, in this way, to keep the photosynthesis going. The intent was to keep "classic varietal flavors and aromas." It sure does. If you like your Sauvignons with some veggies, this is a beauty. It has a ton of personality but also good acidity and fine depth in the mid-palate. The tension on the finish allows the fruit to linger, and the veggies are not so strong as to be in the nose-wrinkling category. This relatively new bottling has been increasingly impressive as it has matured. I don't think I've had a better Sauvignon Blanc from Israel. You should probably drink it on the younger side, but I won't be surprised if it is drinking well around 2023 either.
