This has light and bright aromas of fresh white peaches and lemons with a swathe of pastry, too. The palate is very fine and unfurls layers of peach, lemon and, finally, almond-pastry flavors. Drink now. Disgorged February 2019.
The NV Brut Blanc de Blancs Conversation Grand Cru offers tremendous depth, intensity and persistence, especially for a Champagne based on the 2011 vintage. Yellow stone fruits, pastry, mint, chamomile and lightly honeyed notes meld into a creamy, expansive finish supported by veins of salinity. This is very nicely done. The current release is based on the 2011 vintage, with 25% reserve wines. Dosage is 5 grams per liter. Disgorged: December 2015.
Disgorged in April 2018, the current release of Vergnon's NV Brut Blanc de Blancs Grand Cru Conversation continues to exhibit a charming nose of toasted coconut, green apples and ripe lemons. On the palate, it's medium to full-bodied, with racy acids, a youthfully frothy mousse and a pure, chalky finish. Expressive and open, it's drinking well today.
