The "Isabelle & Denis Pommier Chablis 2025" is a white wine from the prestigious Chablis region of France, known for its cool climate and chalky soils. This vintage exhibits a crisp flavor profile with notes of green apple, citrus, and subtle minerality, characteristic of classic Chablis wines. Its high acidity and refreshing finish make it an excellent representation of the terroir.
This wine pairs well with seafood, particularly oysters and shellfish, and is ideal for casual gatherings or formal dinners. Serve chilled at around 50-55°F for optimal enjoyment.

The 2021 Chablis Côte de Léchet 1er Cru has a pretty bouquet with yellow flowers and a dab of orange blossom, but there is real mineralité behind this that elevates it above its peers. The palate is fresh on the entry with crisp acidity and well integrated oak, just a little honeyed towards the finish but it feels precise with impressive length. One of the pleasant surprises of the tasting. Tasted blind at the Burgfest tasting.
