The label of the Henri Bourgeois Jadis declares this wine 'a reminder of the sea that was once and is no more', a reference to the shallow sea that once covered Sancerre and has left its traces in fossilised seashells in the soil. The wine does indeed smell of a bracing sea breeze. The palate is centred around a beautiful mineral acidity that derives from the complex blend of soils. The vines grow on south-facing slopes of Kimmeridgian marls, flint and siliceous clay in the village of Amigny, and the grapes are picked by hand. This is a full-bodied, full-flavoured and highly characterful wine that will not disappoint. Ages on its lees in used oak for a year.
