The new release of Billiot's NV Brut Cuvée Julie—once again derived from the 2010 vintage and dosed with six grams per liter, but this time disgorged in October 2019—is showing well, wafting from the glass with aromas of pear, smoke, clear honey, crisp stone fruit and subtle hints of toasted notes. Medium to full-bodied, layered and concentrated, it's racy and incisive, with tangy acids and real mid-palate depth, concluding with a saline finish.
