Nuances of tarragon and white pepper emerge, carried by a creamy yet assertive mousse that unfurls with candied saline minerality. Crafted using the méthode traditionnelle, with a minimum of three years’ ageing on the lees. pH: 3.1; TA: 0.8 g/100 ml; Dosage: 0.9%.
A blend of Chardonnay and Pinot Noir, the 2021 Estate Brut looks to have about the same dosage as the preceding vintages, around nine grams per liter. It's a pale, biscuity-scented offering that is redolent of citrus and green apple on the nose. It's medium-bodied on the palate, with a clean, refreshing finish.
