The ancestral sparkling 2023 Phaunus Pet Nat White is very cloudy and has a strong character, lots of personality in a funky way. It was disgorged in November 2025 after two years in bottle where it finished fermenting. It does have the ambition to be a serious quality sparkling wine, and I would say that it is, as it goes beyond the fun and fresh examples of the category. It's a 50/50 blend of Arinto and Loureiro from their 16-year-old vines on granite soils at 100 meters above sea level. The varieties fermented separately, pressing the full clusters, and then it was blended and put in bottle to finish fermenting. The nose is complex and has notes of herbs, flowers and cereals, followed by a palate with pungent acidity and very small bubbles. It has a moderate 11% alcohol, a pH of 3.2, seven grams of acidity and finishes dry and tasty. 6,000 bottles produced. It was put in bottle in October 2023
